INGREDIENTS

* 1 (10.75 ounce) can condensed cream of chicken soup
* 1 cup milk
* 1 cup uncooked long grain white rice
* 1 (4 ounce) can diced green chilli peppers, drained
* 2 skinless, boneless chicken breast halves - chopped
* salt and pepper to taste
* 1 cup shredded Cheddar cheese (optional)
* 1 cup frozen peas

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium casserole dish.
2. Mix the soup, milk, rice, and chile peppers into the casserole dish. Place chicken in the dish. Season with salt and pepper, and top with cheese.
3. Bake covered 1 hour in the preheated oven. Mix in the peas. Let stand covered 5 minutes before serving.

Just been having a look at what recipes I've got in the BabAnon cookbook thread. There's this one: QUICK CHICKEN & BACON PILAU
(Serves 4)

Ingredients: 200g pack smoked back bacon, chopped
2 skinless chicken breasts, chopped
300g long grain rice
2 medium onions, thinly sliced
330/350g jar spicy tomato sauce
3 tablesp. olive oil
Knob of butter or margarine
Fresh chopped parsley to garnish
600ml boiling water

METHOD:

Fry the onions and the bacon in the oil and butter until softened and starting to colour. Add the chicken, stir fry for 2 mins., until browned then tip in the rice and cook for about a minute more until the rice is glistening. Tip into a large ovenproof dish. At this stage you can cool and chill the dish until later or the next day, if desired.

When ready to complete cooking the dish, pre-heat the oven 375ºF/190ºC/Gas Mark 5. Tip the tomato sauce into the rice and then pour on 600ml of boiling water and bake in the oven for 30-35 mins., until the sauce is absorbed and the rice is tender.

Garnish with fresh, chopped parsley and serve with a salad or vegetables of your choice.

My sister injured her arm about 11 years ago, and slowly, and painfully, the tendon which attaches to her shoulder, has atrophied, and all of the lubricating fluid in the joint has drained away... this is a Hail Mary surgery to see if it can be reattached... poor thing, she has lived on painkillers for far too long!!
