Ever since I bought the "Beast", I pop in to say hi to Mr Kap ever month or so. I played a bunch of pianos last visit, including a Model M (5'7"-ish) from the 1920s. Incredibly sweet sound, but clearly in need of beaucoup work. My tech doesn't like to do partial restorations. He'll revoice for about 2 grand, or totally restore which is 10 to 20 thou. Mine is 1975, and he says all original parts. Not perfect, but certainly good enough; he says it was well cared for. Since I only play half an hour a day, I don't think I'll be beating it up exactly.

pugs, it's all in the way it is cooked. i soak mine overnight, to remove as much of the salt as possible. then a long, slow cook with dry mustard powder, peppercorns, bay leaves, brown sugar and brown vinegar.
