One of my best memories is eating a shrimp salad sandwich on a fresh croissant at an ocean front restaurant. The combination of blue sky, good food and the smell of the ocean was divine.

Melt a stick of butter in a 9x13 glass casserole. Lay slices of three or four lemons in the butter. Toss your shrimp in Italian seasoning, however I used Old Bay last night, then put shrimp on top of lemons. Bake at 325 until shrimp is pink.

I've been watching the news and thinking if 30 years ago we watched a horror flick where the plot begaqn with 7500 people sitting shoulder to shoulder with no protection during a highly contagious pandemic, in the middle of a highly forested region with limited access where thousands of fireworks were to be set off in the middle of a drought, we would have said " yeah -- that that is likely ever to happen!
