Rbud - think popovers. Yorkshire puddings are (I found out by accident) the same as popover, except sometimes made as a big flat thing, rather than individual things.

no -- it is cooked in 2 stages carla. after braising and baking for 15 min at 480, you cool it down, then spread a little pate on the top of it and wrap it in puff pastry (I use sour cream pastry) then bake it for another 20 minutes -- that takes it from med. rare at the ends to rare in the middle.
